Quesadilla

Incredibly versatile and therefore something every guy should know how to recreate. Filling can be pretty much anything, though you need two tortillas and cheese as a base. Best served with a beer (Mexican food and therefore an ice cold corona would be ideal)

Ingredients:
2 tortillas
Grated cheese
Any type of meat (pulled pork, canned tuna, cooked chicken etc)
Red onion/spring onion sliced
Vegies chopped (capsicum, spinach, red cabbage, corn, tomatoes etc)
Sauce (I like to use a black bean chipotle, however again this can be substituted)
Chilli (optional)
Coriander (optional)

 

Spread sauce out on one of the tortillas, and add half the cheese.

Chuck on all the other fillings (Careful to leave a small space around the edges so it won’t spill out later)

Spread the rest of the cheese over the top. Place second tortilla on top and place into warm pan.

Use a heavy flat bottom dish to compress the tortillas. Once the tortilla is crispy on the bottom, flip and cook until other side/tortilla is golden.
Serve with sour cream and guacamole
